About this piece
The thick clay walls of a handi heat slowly and hold that heat evenly, so dals and gravies simmer gently without catching at the bottom. The narrow mouth and heavy lid keep moisture in. Season before first use and cook on a low to medium flame.

Use & care
Before first use, soak in water for 6–8 hours, dry, then rub the inside with a little oil and heat gently. Always start on a low flame and raise it slowly; never place on a flame when empty. Wash with warm water, a soft scrubber and a little baking soda or ash — avoid soap, which the clay can absorb. Dry completely, upside-down, before storing.
